This healthy, simple, quick and delicious recipe is brought to you by my good friend Elissa Lee Koljonen a fabulous violinist and protégée of Aaron Rosand. She was the first recipient of the prestigious Henry Szeryng Foundation Award, silver medalist in the Carl Flesch International Violin Competition and fellow classmate at the Curtis Institute of Music - with a cameo appearance by her lovely daughter Sofia.
